Because why should riding a bike be so uncomfortable? While women specific design in saddles is less common, they do still exist. A ladies saddle is generally wider to accommodate wider sit bones. They are often aimed at a more upright riding position with this width as well, as this was common on retro ladies bikes. Especially step through bikes!

Another common feature of the ladies saddle is a shorter nose or overall length of the saddle. This will generally account for a shorter frame or top tube of the bike. Or account for those step-through bikes where you will need to throw a leg through the frame.
